Easy Salted Brownie Cake

I think it's time to pay homage to the person who taught me everything I know about cooking and the person I go to to approve everything I make, my Mother! 

My mom has a talent for inventing dishes that stick. When she creates a successful dish it will be on our table every week for years. This recipe is the perfect example! The need for a super-quick brownie resulted in something so easy and so good! A brownie is obviously a very important thing to master so who would have thought making one in a blender would be your best bet?!

This very special brownie is now a regular feature on our Friday night dinner table so I guess I'll be enjoying a slice tonight! You should too!
                  Salted Blender Brownie Cake

YOU WILL NEED:
1.5 CUPS SUGAR
4 EGGS
2/3 CUP SOFT MARGARINE
200G MELTED DARK CHOCOLATE (I USE LINDT)
2 TSP VANILLA EXTRACT
1 1/3 CUPS FLOUR
1 TSP BAKING POWDER
1/2 TSP SALT 
1/4 TSP VINEGAR
MALDEN SEA SALT FOR SPRINKLING

Pre-heat oven to 175 Degrees C or 350 F.

Start by melting the chocolate by breaking the pieces into a small metal bowl in a pan filled half way with boiling water. Stir occasionally until the chocolate has melted.

In a food processor, combine the sugar, eggs, margarine, melted chocolate, vinegar and vanilla extract. Mix until creamy. (Approx 2 minutes). Add the flour, baking powder and salt and blend for another two minutes. Pour into a greased cake tin or dish of your choice. (I use a 9" one).

Sprinkle with a pinch of sea salt. 

Place on a baking tray incase the batter over flows. Bake for 30 minutes. (You'll know it's ready for sure by placing a tooth pick in the centre. If it comes out dry, it's done!)
